The mission of Providence is to produce the best rums by exploring the different possibilities offered by the Cristalline cane and various production methods. Aiming first and foremost at quality, the Providence team aims to explore the different facets of various raw materials (fresh juice, syrup, addition of dunder…), making the distillery a real laboratory of experimentation, by favourising an artisanal production in small batches.

Providence 3 Year represents the first aged rum from the Port-au-Prince Distillery in Haiti. Like its unaged counterparts, this rum stands out for its traditional production, using as its base the syrup from the ancient variety of sugar cane “Cristalline“, cultivated on the lands of Michel Sajous in Saint-Michel de l’Attalaye, Haiti.

Fermentation is carried out using selected yeasts and vinasse from previous distillations, thus fostering the development of a unique aromatic complexity. The result from fermentation is then distilled in two stages in the same pot still heated by hot water. The distillate obtained is then aged in Port-au-Prince, Haiti in a variety of ex-Caroni casks, before being reduced to 52% before bottling.
