We just love that. And it gives you an idea of who Nil Desperandum are and why they do what they do. The purest rum distilled with love, art and science. Full of expressive and full-bodied flavour, authentically Australian but comfortably compared to the most exceptional Caribbean rums.

It is fast becoming recognised as one of Australia’s finest rum, with unique terroir of soil, climate, and place creating rum like no other, bold flavours of ripe tropical fruit. Molasses from sugar cane, organically grown on Queensland’s rich, fertile volcanic plains, is naturally wild fermented with Woombye water, (some include dunder and muck), then double pot distilled and carefully barrel aged. Delicious, 100% pure, unadulterated rum. No additives. No added sugar, sweeteners, caramel, glycerine, flavours, colours, or chemicals.

TASTING NOTES
“The Pombe Fission”: S. Pombe yeast with unique properties for creating high flavours and aromas, as used by some of the most famous Jamaican Rum Distilleries. Notes of pineapple, apricots and black bananas. Hints of caramel and lollies.
“Premier”: Dry rich intense flavours of toffee, molasses, maple syrup that are wound around tropical dried fruit. Dried banana, ripe pineapple, candied bon bons, dried mango and mid palate weight of figs and dates. Spices of cinnamon and nutmeg, and cocoa, coffee bean.
“The Mezcal Barrel”: Stylish & unique. Pleasantly smoky notes of maple syrup, treacle & tropical flowers. Hints of wild honey & coffee beans.

Perhaps the star of the show in the Rare Rum Triple Tasting Pack, and the latest rare rum release from Nil Desperandum, is The Pombe Fission, with its use of the rare Schizosaccharomyces pombe yeast, also called S. Pombe or “fission yeast”.

We caught up with Head Distiller, Adam Chapman, to discuss all things S.Pombe and why is it special in rum making. Here’s what he had to say: “This yeast has the ability to live, grow and handle rather high levels of fatty acids, allowing the bond of ethanol and other alcohols with the fatty acids to create high flavours and aromas [higher ester levels].
[The Pombe Fission] is the first time that we have watched the fermentation and yeast fission under the microscope and seeing the flavour profile of ripe pineapple and black bananas and dense overripe pawpaw being developed with the magical matching of alcohols and fatty acids in high levels.

With a total Congener level of 972 g/HL and bottled at a stunning cask strength of 57.5%, this is truly a unique and interesting rum that will be sure to impress! A must try for rum enthusiasts, geeks, collectors and connoisseurs alike.
