Capricorn Tropic of Rum

Capricorn Tropic of Rum is crafted by QLD craft distillers Capricorn Distilling Co., who are producing some damn fine rums, under the same tried and tested recipes from the last few years. As mentioned, in 2020 their signature spiced rum won the award for the world’s best-spiced rum at London’s prestigious ‘World Rum Awards’ spirits competition. Quite the accolade, especially from our British cousins who know their way around a drink or ten. The selection of rums is sizeable, with differing styles for every taste, from flavourful unaged coastal cane spirit and ‘funky’ high ester expressions, to pure single barrel aged rums matured in select barrels and a couple of specialist batches such as pineapple infused rum and their latest black truffle rum — sure proving popular!

Their latest release, the Capricorn Tropic of Rum is as real as it gets. Paying homage to Capricorn Distilling Co’s founding town of Rockhampton, on the Tropic of Capricorn.

Capricorn Tropic of Rum is distilled in their copper pot still called “Burleigh”, a traditional British-style single retort still that crafts one batch at a time, providing greater control over the flavours of the spirit. Using QLD molasses and aged first in new American oak and ex-Bourbon barrels, the rum is then meticulously blended and further matured in an American oak Fodre. This Rum offers a complex and refined tasting experience. We are very pleased to see a slightly higher Alc./Vol. of 43.2% on this release with that signature Capricorn taste, leading in part to a more robust profile perfect for sipping or with your favourite mixer or cocktail. This is good stuff and at a ripper of a price point for the quality!

TASTING NOTES
It presents a deep mahogany hue and greets the nose with inviting aromas of caramel, molasses, sawdust and oak with slight hints of ripe tropical fruits and berries. The palate is velvety smooth, unveiling more flavours of vanilla, tobacco and burnt sugar.
The finish is lingering and warm, with oak spices, and a delicate smokiness, complemented by the American oak’s nuanced woodiness and a touch of dried fruit sweetness.  Capricorn Aged Rum embodies the artistry of dual-wood ageing, delivering a harmonious balance of flavours that captivates from first sip to last.
